    N-Nitroso compounds were known almost 40 years ago to be present in food treated with sodium nitrite, which made fish meal hepatotoxic to animals through formation of nitrosodimethylamine (NDMA). Since that time, N-nitroso compounds have been shown in animal experiments to be the most broadly acting and the most potent group of carcinogens. N-nitroso compounds result from reactions involving other chemicals called alkylamines. At room temperature, N-nitroso compounds are yellow liquids. They do not have a distinct odor. Industry makes small amounts of N-nitroso compounds for research. They can also be formed as a side-reaction when other products are made.

Five years ago (Mirvish, a), I reviewed the subject of this chapter, and the present review covers reports up to the middle of Nitroso compound, any of a class of organic compounds having molecular structures in which the nitroso group (-N=O) is attached to a carbon or nitrogen atom. Substances in which this group is attached to an oxygen atom are called nitrites, that is, esters of nitrous acid; those in which the nitroso group is attached to a metal ion are called nitrosyls.
